Grilled Salmon with Lime Butter

I'm so glad this moving stuff is almost over! Unfortunately the weather did not cooperate with my move over the weekend, so I was pretty behind schedule. Last night I got a lot done, and I should be completely done after this weekend. Why does moving always have to be a pain? I'm cooking dinner at my new place this evening, and it's going to be an easy one as most of my things are still packed. I can't wait to finally be settled in!

Grilled Salmon Recipe From Lobster Gram
Ingredients

  • 1 large garlic clove, chopped
  • 1/4 cup fresh lime juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 stick (1/2 cup) unsalted butter, melted
  • 3 lbs salmon filets
  • 1 1/2 teaspoons finely grated fresh lime zest
  • 6 tablespoons lime butter sauce
Recipe Directions
Puree garlic with lime juice, salt, and pepper in a blender until smooth. With motor running, add melted butter and blend until emulsified, about 30 seconds. Prepare grill for cooking over medium-hot charcoal (moderate heat for gas). Season salmon all over with salt and pepper, then grill, flesh sides down, on lightly oiled grill rack (covered only if using gas grill) 4 minutes. Turn salmon fillets over and grill (covered only if using gas grill) until just cooked through, 4 to 6 minutes more. Sprinkle fillets with zest and top each with 1 tablespoon lime butter sauce.

Super Easy Salmon Bake- I miss my kitchen!

I am moving this weekend, so anything I can possibly still cook at home has to be fast and easy. I can't wait to get resettled and unpacked again, I can't seem to find anything. Unavoidable I guess. Tonight I have decided I am going to cook, and I'm going to make this super easy salmon recipe. It's fresh, fast, easy and healthy. Enjoy foodies! Wish me luck with the move!


Ingredients

  • 1 pound salmon fillet, halved
  • 1 small tomato, chopped
  • 5 green onions, chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
Preheat oven to 350 degrees F. Place salmon on a lightly oiled sheet pan or in a shallow baking dish, folding under thin outer edges of fillets for even cooking. Top salmon with chopped tomatoes and green onions, and season with salt and pepper. Cook salmon in the preheated oven, uncovered, for approximately 20 minutes. Fish is done when easily flaked with a fork.

Salmon Steaks with Orange Balsamic Glaze

I love fresh salmon steaks. Aside from being delicious, fresh salmon is packed with Omega 3. I made this recipe for dinner Saturday night and it was absolutely amazing. I served it on top of Jasmine rice for the first time, and I think that's how I'm going to serve it from now on!

Ingredients
  • 1/4 cup orange juice concentrate
  • 1/4 cup balsamic vinegar
  • 1 tablespoon extra-virgin olive oil
  • 2 cloves garlic, finely chopped
  • 1 tablespoon finely chopped fresh rosemary
  • 1/2 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 4 salmon steaks (about 6 ounces each)
  • Vegetable cooking spray
Directions
Place first 7 ingredients in a large seal- able plastic bag. Shake well. Add salmon and refrigerate 30 minutes to 1 hour. Remove steaks from marinade and pat dry with a paper towel. Coat grill with cooking spray and heat on high. Grill steaks, turning once halfway through, until no longer translucent in the center, about 4 minutes per side.
