Summer Cooking at Dan "The Lobster Man's" Housse

Yesterday, a few Lobster Grammers were over at Dan "The Lobster Man's" house to grill some Filet Mignon and cook some crab cakes. It was nice to be out of the office in a nice big back yard hearing the birds sing, sitting in the sunshine and playing with Dan's 4 month old Goldendoodle Misty. I wish there were more days like that at work! I have a few video clips I want to share now, and more to come shortly. I also have some fantastic pictures from our classic Maine Clambake coming up later today. So enjoy the videos and check back later for some of the most appetizing pictures I think I have ever taken.

Good Monday morning to you foodies! I hope all of you had a splendid weekend and a great start to your week. It's been a busy few days around the Lobster Gram office. We are gearing up for Grilling Season and Fathers Day, so what better way to do that then prepare Grilled Maine Lobster Tails? Andy was in the Lobster Gram test kitchen last Friday showing you how easy it is to par boil and grill finish Maine Lobster Tails. So here is Andy's video, and we have some great pictures to follow this afternoon so check back soon for something fresh!

Dreaming of My Next Recipe

This first week of recovering from having my wisdom teeth pulled has been difficult. The extraction was easy enough. I thought it was going to be much worse with the bottom teeth impacted into the bone, but it went smoothly. The rough part...the soft food diet and the antibiotics. Since Saturday I have pretty much survived on yogurt, pudding, and mashed potatoes and all I can seem to think about is when I'm going to be healed enough to make my next real dinner. I have decided that when all is said and done, I'm going to make some steak, and I'm going to use the recipe below. I already have the steaks in the freezer, and if they give me that come hither stare one more time I swear I'll eat them raw in their vacuum sealed pack. But I'll try to refrain :)


Ingredients
  • Two 6 oz. filet mignon steaks
  • 1/8 tsp. salt
  • 1/8 tsp. freshly ground black pepper
  • 2 Tbsp. butter
  • 1 tsp. Dijon-style mustard
  • 2 Tbsp. shallots, minced
  • 1 Tbsp. butter
  • 1 tsp. lemon juice
  • 1-1/2 tsp. Worcestershire sauce
  • 1 Tbsp. fresh chives, minced
  • 1 Tbsp. cognac
  • 2 Tbsp. sherry
  • 1 Tbsp. fresh parsley, minced

Directions
Season both sides of the steaks with salt and pepper. Melt butter in a heavy skillet; add mustard and shallots. Sauté over medium heat for 1 minute. Add steaks and cook approximately 4 minutes on each side for medium-rare doneness. Remove steaks to serving plate and cover with foil to keep warm. Flame pan with cognac (or simmer for 2 minutes), and reduce heat. Add into pan 1 Tbsp. butter, sherry, lemon juice, Worcestershire sauce and chives. Cook for 2 minutes. Pour sauce over steaks and sprinkle with parsley to garnish.

3 pulled teeth= unhappy foodie

Good Monday morning foodies. I hope everyone had a great Mother's Day, and an overall better weekend than I had. Unfortunately, my weekend involved an emergency visit to the dentist on Saturday that resulted in me getting my last three wisdom teeth pulled. Not a good time, but rather necessary. The procedure it's self went smoothly, and that's coming from someone who is terrified beyond all reason of needles.
Thing that really sucked about getting teeth pulled this weekend...I couldn't partake in my Mom's Mother's Day feast. I prepared Maine Tails, New York Strip steaks and twice baked potatoes, but I could only eat the potato. For dessert, Mom wanted the peanut butter cup cookie cake, so I couldn't have any of that either. Oh well. On the upside, we did still have some chocolate lava cakes in the freezer that when microwaved have the perfect consistency for someone who just had an extraction. That is some real comfort food right there.
I think I'm going to order some sorbet and soup to have on hand for the next few days while my face goes back down to normal size, and when this is all healed and over I'm going to order some massive cowboy rib chops. Nothing like 22 oz of prime steak to celebrate being able to eat again. I can't wait! Until that time, I see a LOT of jello in my future.

Cookie Cake Sampler for Mother's Day

Ok...as we all know, Mother's Day is this Sunday 5/10/09. I have decided to treat my parents to a gourmet Lobster Gram feast! I have Maine Lobster Tails, New York Strip Steaks and Filet Mignon in the freezer at home that I'm going to prepare for lunch with twice baked potatoes and a Cookie Cake Sampler. Lobster Gram just started carrying these less than a year ago, and I knew right away it was something Mom would just love. Giant Gourmet Cake sized cookies...who wouldn't love that? My package arrived this morning, and I just had to take some pictures to share. We also have an OUTSTANDING SALE going on with these right now, so they are FLYING off the shelf for Mother's Day. There are going to be a LOT of happy Moms out there this year, and that really matters to a company as family oriented as we are. In fact, I became aware of Lobster Gram because my Mom took a seasonal job here many years ago while I was in high school and she still comes back to work with us during the holiday season. So quite literally, it's a family thing! I hope everyone out there enjoys their Mother's Day...with food like this around, I know I will!
