Making Campfire New Zealand Lobster Tails in Dan "The Lobster Man's" Back Yard!

Dan "The Lobster Man" of Lobster Gram is the Lobster Cooking Master. I admit, everything I know about lobsters, cooking lobsters, shucking lobsters and eating lobsters has come straight from the Lobster Man. Dan gave me this recipe a few weeks ago and I made it while camping. My surroundings were a bit too loud to shoot a video, so he took care of this for me! Here is Dan "The Lobster Man" in his very own back yard showing you how to prepare exotic New Zealand Lobster tails in a not-so-exotic way...over a campfire.

We started off with a step-by-step video of how to boil a Live Maine Lobster, and then we moved on to the best way to crack open and enjoy your lobster. Awesome Steak Rub from this Weekend!

Morning foodies! I hope everyone had a great Labor Day weekend! I spent most of my weekend cooking! Made a lot of tasty stuff, but I think the best was the meal I had with my parents yesterday. I had gotten a huge pack of Rib Eye steaks from Dominick's Friday night. There were 7 steaks total in this package and it was only $14. Can't beat that price. I would have taken pictures, but I was lame and left my camera in the office :(
Anyway...yesterday was family grilling time so I decided to make a good rub for the steaks and make some Hasselback potatoes (don't like the woman at all, LOVE the potato recipe!). The Rub recipe was adapted from Bobby Flay's World Famous Steak Rub from Mesa. I added a few ingredients and substituted a few to get the right rub for everyone to enjoy. It turned out great. I wish I had made the rub the day before and let the steaks rest over night, but I know better for next time.
So here it is! Bobby Flay's Mesa Grill Steak Rub recipe adapted by Nikki the Foodie

Ingredients
1 cup Mexican chili powder
1/3 cup Paprika
3 tablespoons ground dried oregano
3 tablespoons ground coriander
3 tablespoons dry mustard
1 tablespoon ground cumin
1 tablespoon kosher salt
1 tablespoon ground black pepper
1 tbs brown sugar
1 tbs powdered garlic
1 tsp Cayenne Pepper

Directions

Whisk together all ingredients. Store rub in a container with a tight fitting lid in a cool, dark, place.

Grilled Alaskan King Crab Legs with Simple Seafood Marinade

Good Friday morning all! I hope everyone is having an awesome Friday and has some rockin' plans for Labor Day. I have a lot of relaxation planned for myself. Lobster Gram was cool enough to close the office all weekend long, so all of my lobster loving cohorts get a chance to have a nice long three day weekend. Thanks Dan!
So last night's dinner was awesome. I prepared some simple seafood marinade and grilled up some Alaskan King Crab legs from Lobster Gram on the indoor grill. I also brought home a Manhattan Clam Chowder (I could live on this soup) and a Cookies N' Creme Cake for dessert. I whipped up some fried potatoes to enjoy with the crab, and both the cameraman/sous chef and I were stuffed beyond reason when the meal was complete.
The crab legs were the most flavorful I have had in a long time. The simple seafood marinade augmented all of the natural deliciousness of the crab, and would actually go well on anything from Lobster to fin fish. I intend to try this one again with a lot of different types of seafood.

Simple Seafood Marinade for Grilling Alaskan King Crab Legs

Ingredients
2 lb. frozen cooked King crab legs, thawed & shelled
1/4 cup clarified. butter, melted
1 tbsp. mustard
1/8 cup lemon juice
1/4 c. dry white wine
1/8 cup dry parsley
Salt & Pepper to taste
Garlic Powder to taste

Directions
Combine dry wine, butter, lemon juice, parsley, mustard and salt/pepper/garlic powder to taste. Brush the mixture on crab meat. Place crab meat on grill heated to medium. Brush the crab meat with the butter mixture and turn occasionally until heated through, 5 to 6 minutes.
